Violić M. Boris Winery is, for certain, one of the wineries where you can feel the spirit of tradition and the importance of winemaking on the Pelješac peninsula. The passion and the force in the words of this winemaker as he tells you about viticulture and winemaking on
Pelješac perhaps best describe the value of the terroir that these winemakers will never abandon. The winery is located in the small place Potomje on the Pelješac peninsula, close to the Dingač tunnel. The vineyards are also situated in Potomje as well as on the steep slopes of Dingač. The exquisite locations give the wines a special quality and a refined taste. The winery’s production is based on the autochthonous variety Plavac mali. We must also mention that this winemaker is one of the “subjects” to the “Imperator” – a wine of exquisite quality and powerful story.
So… the story of Imperator starts in 2011, when ten friends and winemakers got together in Dingač with the aim to produce a wine which will defy the trends of modern enology. These were younger winemakers from Pelješac, who nevertheless greatly esteem and value the family tradition of winemaking and the terroir of the positions Postup and Dingač, which have been in the family’s possession for generations and which cannot be worked any other way but manually. For this wine, subsequently named “Imperator”, each of the winemakers gives around 50 kilograms of the best plavac mali grapes solely from old vines. Since they have decided from the start to defy modern technology, the wine is produced in the traditional way using only the strength of the human being, as it was done hundreds of years ago in this region. Among themselves they also call this wine “social wine” and they have founded the wine brotherhood “Krek”.
