Purple red with violet tints. Presents a delicate scent of red fruit and berries with a zest of sour cherry. The bouquet is very soft, quite fresh and sapid, making it a very well balanced wine. The tannins are soft, supple and mature.
Vinification
Grapes are hand-selected. Soft pressing of grapes after removal of stalks and maceration for 7 days. At the same time, alcoholic fermentation, at controlled temperature (23 - 28°C), lasts 10 days. This process is followed by malolactic fermentation. After that the wine matures on yeast (battonage) for 8 months in stainless steel vats. The last production phase is bottling done without filtering.
Seasoned cheese, cured prosciutto and sausages, Istrian “fuži” pasta with tomato sauce, grilled white fish.
Best served at 15 °C
