Veliki Plavac Mali is the last wine in a series of Andro Tomić's passionate projects – it is produced only in exceptional years and bottled only in magnum bottles (1.5 liter). Previously it was possible to try this wine only at Tomić Winery on Hvar Island.
For this wine we use only the grapes from select vineyards located at the best positions on the southern side of Hvar Island. The extreme conditions of the steep and sunny slopes on the southern side of the island (Ivan Dolac, Sv. Nedjelja, Jagodna) impose the organic approach as the only choice – in other words, manual labour, with minimal intervention into natural processes and resulting in small yields of highest quality grapes (0.5 to maximum 1 kg).
The natural intensity of the varietal aroma of dark and ripe fruit (dark cherry, plum), Mediterranean herbs and minerality is rounded up by aging the wine for 18 months in Slavonian barrique barrels, which adds notes of wood, leather, game, tobacco and spices. The wine is characterized by strength, robustness, high extract. The structure and acidity balance well its alcohol content of almost 16%. During aging, the wine develops tertiary aromas of tobacco, leather, mushrooms and forest floor.
It's character will be best appreciated if served at 20°C. This wine makes a first-rate match with spicier dishes, roasted meat and especially with Dalmatian culinary specialties.
