SPARKLING WINE BRUT - Babos

Babos sparkling wine is obtained from 100% Istrian Malvasia. The grapes were harvested as soon as the end of August in order to maintain high acids which are indispensable for a good sparkling wine. It is produced by the Charmat method. The wine is labeled “brut”, has a lovely straw yellow color, crystal clear towards shiny. Distinguished by a lovely perlage with a lot of tiny, long-lasting bubbles. The wine has a partially pronounced intensity of aroma, which is fine and pleasant. Floral aromas dominate, with a little of citrus and dry fruit and a slight note of yeast, with partially rich complexity. This sparkling wine is light, drinkable, partly soft. The final result is an excellent sparkling wine, ready for consumption.

Grapes are hand-selected. Soft pressing of grapes after removal of stalks and cold maceration for 1 hour before pressing. Alcohol fermentation, at controlled temperature (16°C), lasts 12 days. After fermentation the wine is refermented in steel tanks with the “Charmat” method before bottling.
